An alternative method to make chocolate fudge is to make it like candy, using a candy temperature to regulate the heat to achieve the right temperature to reach a candy ball state. This following recipe calls for sour cream that is said to give the chocolate fudge a pleasant tangy flavor.

Chocolate Sour Cream Fudge
Ingredients

2 cups white sugar
½ cup sour cream
1/3 cup light corn syrup
2 tablespoons butter
1 teaspoon vanilla extract
2 (1 ounce) squares unsweetened chocolate
½ cup chopped nuts

Directions
1. Butter an 8X8 inch pan and set aside.
2. In a heavy saucepan combine the white sugar, sour cream, corn syrup and butter. Bring to a boil and cover, boil for one minute more. Stir until well blended. Remove lid and, without stirring, heat to 234 to 240 degrees F (112-116 degrees C). To test that mixture has reached the correct temperature, drop a small amount of the chocolate into cold water to see if it forms a small ball in the water but flattens when removed from the water and placed on a flat surface.
3. Remove from heat and add vanilla and chocolate. Do not stir. Allow the mixture to cool to 175 degrees F (80 degrees C). This should take approximately 15 minutes.
4. Beat the chocolate fudge with a wooden spoon until it thickens and loses its gloss. Stir in walnuts. Pour into buttered dish. Spread evenly and allow to cool. Cut into small squares.

Makes approximately 64 squares.
